List of Ingredients

400g Giant Grouper
1 Teaspoon Coarse Sea Salt
1 Teaspoon Lime Sauce/Juice
1 Tablespoon Minced Fresh Ginger
1 Tablespoon Sliced Red Chili
3 Tablespoons Thinly Sliced Spring Onion
1 Tablespoon Dark Soy Sauce
1 Tablespoon Light Soy Sauce
1 Tablespoon Fried Shallot with Oil
2 Teaspoons Toasted Sesame Oil
¼ Cup Lightly Packed Fresh Coriander

Instructions

Step 1

Pat giant grouper dry with paper towels. Rub both sides with salt and lime sauce/juice.

Step 2

Scatter the minced ginger and sliced red chili over the top of the fish and place onto a heatproof ceramic dish.

Step 3

Place into a bamboo steamer set over several inches of gently boiling water, and cover. Gently steam for 10 to 12 minutes.

Step 4

Pour accumulated water out of the dish and sprinkle the fish with spring onion. Drizzle both soy sauce over the surface of the fish.

Step 5

Heat sesame oil in a skillet over medium-high heat until they begin to smoke. When the oil is hot, carefully pour on top of the fish.

*Be careful*

The hot oil will cause the spring onions and water on top of the fish to pop and spatter all over.

Step 6

Garnish with fried shallot oil and coriander. Then, serve immediately.
