List of Ingredients

2 Slices of Bread
1 Teaspoon Lemon Juice or Apple Cider Vinegar
Grade-A Egg
100g Avocado or Avocado Puree
1 Teaspoon Extra Virgin Olive Oil
1/2 Teaspoon Salt
1/4 Teaspoon Black Pepper
1/2 Cup Salad Greens or Spinach
Optional: Smoked Salmon


Step 1

Toast bread.

Step 2

Bring 50ml water with ¼ teaspoon of salt and 1 teaspoon of lemon juice or vinegar to a simmer over high heat. Do not allow water to boil. Reduce heat if it begins boiling.

Step 3

Crack the eggs into a small bowl and slide the eggs into the water.

Step 4

Simmer for 3 to 4 minutes until the egg white is solid, but the yolk is still liquid. Remove with a slotted spoon and place on paper towel to absorb any excess water. Set aside.

Step 5

Meanwhile, smash the avocado with olive oil, 1/4 teaspoon of salt and 1/4 teaspoon of black pepper using a potato masher or pulse them in a blender until pureed but slightly chunky.

*You can also mix the mentioned ingredients with the avocado puree instead.

Step 6

Spread the avocado puree onto one side of toast, place the eggs & smoked salmon (optional) on toast. Top with salad greens or spinach. Enjoy!
