Poke Marinade
12 Ounces Tuna Saku (or Salmon Cube)
2 Tablespoons Shoyu Sauce
2 Tablespoons Rice Vinegar
2 Teaspoons Sesame Oil
1/4 Teaspoon Ginger Powder
2 Teaspoons Honey
1/4 Teaspoons Sea Salt
Base
4 Cups Steamed White Rice / Sushi Rice / Brown Rice
2 Cups of Mixed Greens
Toppings
1 Cup Carrots, Shredded
1 Cup Fresh Pineapple, cut into chunks
1 Cup Red Pepper, sliced
1 Cup Edamame, shells removed, cooked
1 Cup Japanese Cucumber, diced
4 Tablespoons Mix Nuts
Optional Additional Toppings: Avocado, Tomatoes, Green Pepper Macadamia Nuts, Red Pepper flakes.
Dressings
1/2 Cups Roasted Sesame Sauce
Instructions
Step 1
Cook 4 cups of rice.
Step 2
Pat Tuna Saku dry with a paper towel. Cut into bite-sized cubes using a sharp knife.
Step 3
In a medium-sized bowl, add the shoyu sauce, rice vinegar, sesame oil, ginger powder, honey, and sea salt. Whisk until combined.
Step 4
Place the cubed fish into the bowl with the marinade. Gently toss, then cover and refrigerate while you prepare four bowls.
Step 5
Place 1 cup of rice and ½ cups of mixed greens in each bowl.
Step 6
Divide and add the desired amounts of carrots, pineapple, red pepper, edamame, cucumber and marinated fish.
However, you can do any amount of each item you desire. You can even leave out or add anything you would like.
Step 7
Drizzle the Roasted Sesame Sauce over the poke bowls.
Step 8
Sprinkle with mix nuts and enjoy this island meal!
